Greek Chicken, Veggie Skewers

  • ½ cup olive oil
  • ¼ cup red wine vinegar
  • 1 tablespoon Dijon Mustard
  • ¼ teaspoon Oregano
  • ¼ teaspoon Basil
  • ¼ teaspoon Garlic Powder
  • ¼ teaspoon Onion Powder
  • ¼ teaspoon Maldon Salt
  • 2-3 chicken breasts, cut into 1" pieces
  • 1 red pepper, cut into 1" pieces
  • 1 yellow pepper, cut into 1" pieces
  • 1 red onion, cut into 1" pieces
  • 1 zucchini, cut into 1" half moon pieces
  1. Combine the first 8 ingredients in a bowl and stir to combine. Add chicken to the bowl and cover with a lid or foil. Let the chicken marinade for 1-6hrs. If using wooden skewers, soak in water for 20-30 minutes before assembling. Preheat grill on medium high heat. Assemble the skewers by adding the vegetables and chicken. Pour left over marinade over the skewers. Grill for 15-20 minutes, turning at the half way point. Cover with foil and let rest for 10 minutes. Serve warm.
