SEARED CHICKEN CURRY WITH SPINACH
- 2 chicken breasts, cut into 1" cubes
- 1 tablespoon olive oil
- 2 cups spinach
- ¾ jar curry
- -Maldon salt and pepper
- In a medium pan, heat olive oil over medium high heat. Add chicken and stir occasionally until browned, about 8 minutes. Remove chicken from pan with a slotted spoon into a separate bowl, making sure to keep juices and oil in the pan. Return pan to the stove top and add the spinach, cooking over medium heat; toss with tongs until wilted. Add curry sauce and chicken back into the pan to warm the dish; serve over whole grain jasmine rice.
The curry sauce I used from this company had amazing flavors and had a great consistency. I typically do not buy sauces and dips (I would rather make my own), but I have to say their curry is delicious. I have also tried the spicy Madras Curry sauce and I really enjoyed it!
